Fennel Salad

fennel bulb, thinly sliced
small red onion, thinly sliced
1/2 english cucumber, thinly sliced
lime or lemon
1/2 tsp sea salt

this salad is amazing. its super easy to make, really healthy (very low cal and fat free), and quite delicious. so delicious you'll be asking yourself how something this healthy could be so good. i like it alongside some chicken or fish and rice.

cut off the top stalks of the fennel and then the bottom slice. (keep a bit of the green fern from top of stalk, chop ~ 3 tablespoons) you should be able to take off the outer layer of the fennel and be left with the small inner bulb. cut in half and thinly slice, like an onion. you should have a bunch of half moon shaped pieces. thinly slice the onion, these should also be half moons. and cucumber so all are about the same thickness. add the juice of one lime or lemon, both are equally tasty and the salt. that is it.
